Happy 1st December!!!!!
I thought I’d kick off my December with some festive baking, and boy I had a lot of fun baking these!. After searching on Pinterest (I’ve now got a board set up for festive baking) I decided to bake some peppermint cupcakes. We all know by now how much I adore baking cupcakes!.
For this recipe I used:
175g Self rating flour
175g caster sugar
175g unsalted butter
3 large eggs
1/2 tsp baking powder
1 tsp peppermint extract
1 tsp vanilla extract
I tend to just wack all of my ingredients into a large mixing bowl and use hand held electric whisk until the mixture becomes smooth and soft. I usually whisk for around 2 minutes.
I decided that as well as using peppermint extract I’d add in crushed candy canes into the mixture for a little extra flavour and texture, not going to lie I found it hard crushing them.
I kept some left over for decorating once my cakes were baked and had cooled down. I baked them for around 20 to 25 minutes and left them cool for 10 before I started decorating.
For icing I just used this white icing that came with 3 different nozzle style. I chose to use the fatter ended nozzle and was rather impressed with how it turned out, as we all know icing cakes doesn’t come easy for me.
Because I had some mixture left over and this casing set I picked up came with these mixture ones I decided to use them and I love them!. These cakes were to die for, really pleased with how they turned out and because I didn’t overload them with peppermint they tasted just right. I also liked the texture from the candy canes as well every now and then you’d get a little crunch. Perfect for the holiday’s and I will definitely be baking more of these!. Such a quick and easy weekend or even weeknight bake. They went down a right ol’ treat in my household.
