Merry Christmas Eve!!! Santa’s on his way.
As you know this Christmas I’ve done quite a lot of baking and after looking at ideas on Pinterest I decided to attempt to bake some Grinch style cookies!. Grinch is my second fave Christmas film ( Elf being my first) so when I seen a recipe for these I was sold.
I had a little difficulty with these due to the fact all the recipes I could see were American so I had to use google to convert from cups into grams. I got there in the end and I couldn’t wait to get my bake on.
For this recipe I used:
160g plain flour
96g granulated sugar
16g unsalted butter
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cornflour
1 teaspoon vanilla essence
Green food colouring
M and M’s
To begin I combined the sugar and butter together in a bowl until it was light and fluffy then added in my egg. I stirred in the vanilla essence and food colouring. In a separate bowl I mixed together the flour, salt and baking powder. I added the sugar and butter into the bowl with the other ingredients in and folded in the M and M’s. I then covered the bowl in clingfilm and popped it into the fridge for 30 mins. Once done I pre heated the oven, line a baking tray with baking paper. I did attempt to roll out the dough into balls but that wasn’t happening the mixture was just too sticky so instead I used a spoon and scooped the dough mixture onto the lined paper, and left them to bake for 11 minutes.
I only made 6 of these and by goodness look at the size of them!. I added in extra M and M’s on the top once the cookies were cooling down for extra decoration. I love how these have turned out HOWEVER I wish I’d of put the whole lot of the green colouring in as you can’t tell they are green. They do taste great though and are very soft and chewy. Perfect cookies. Although if I did these again I’d also add a little bit more vanilla flavour.
These are perfect to bake tonight on Christmas Eve or any other time of the year. These went down a treat!
