One more week left of January, thank goodness! This month has been long.
At the end of last year I did a lot of seasonal Christmas bakes and you guys seemed to really enjoy them SO I’ve decide to do more baking style posts this year. I love baking whenever I have free time and it’s something I’ve loved doing since I was a child. My Nanna taught me how to bake cupcakes, scones and pasties and it was a thing we did most weekends. I have quite a few baking books including my Nanna’s original BE-RO baking book.
If you have followed my blog for a while you know that I tend to bake a lot of cupcakes and that my icing never goes to plan, however I really wanted to push myself out of my cupcake comfort zone and attempt to bake an actual cake. I thought I would start off with a simple Victoria sponge cake and see how it panned out. I got this recipe from my new Mary Berry Fast Cakes book (there are a lot of things from this book that I want to make, it makes my mouth water just flicking through the pages!)
The Recipe
8oz butter
8oz caster sugar
4 eggs
8oz self-raising flour
1 tsp baking powder
200ml double cream
6-8 tbsp strawberry jam
I combined all of the cake ingredients into a large mixing bowl and mixed together until all of the ingredients were combined and that the mixture looked smooth. Once I had done that I lined my two sandwich cake tins with non stick baking paper and set my oven to 180 degrees. I divided the mixture as evenly as I could into the tin and baked them for 25 minutes. While they were cooling down I poured out my cream and whisked using a hand held whisker until the cream began to stiffed. This took about 5-8 minutes. Once that was done and my cakes had cooled I removed them from the tins and began to assemble my cake together. To decorate my cake and to make it a little different from the book I added a little cream onto the top and popped on some fresh strawberries and dusted with a small dose of icing sugar.
I’m pretty pleased with how it has turned out. It even tastes like I have bought it from the shop haha. Not bad for a first attempt. This cake went down a storm in my household. I can’t wait to bake more from this book!.

That cake looks scrumptious! My favourite is chocolate fudge cake. You canβt go wrong with chocolate cake if youβre a chocoholic like me. π
