|Seasonal Bakes – Easter Biscuits|

Happy Easter Weekend!

Hope you are all well despite this awful situation we are currently in. Being on lockdown has like it has done to most of us, has made me really in the mood do bake. With the shortage in flour where I live I’ve narrowed it down to a few bakes that I really want to do. I will be baking them over the course of the next few weeks be use to check out my Instagram to see behind the scenes of my bakes.

I decided to try and bake some biscuits as I’ve never really baked them and thought I’d give them a go see what happens. I used my Zoe Sugg Cordially Invited book for the recipe.

The Recipe.

1 egg yolk

250g buter

140g icing sugar

2 tsp vanilla extract

375g plain flour

For Decorating

Easter sprinkles

Pastel coloured icing pens.


For this bake I separated the egg yolk from the white and I mixed together the butter, icing sugar, egg yolk and vanilla until it was all nice and smooth. The I added the flour bit by bit. Once all the ingredients were combined and I rolled it into a ball, popped it in some cling film and put it in the fringe for 30 minutes. Once it was done in the fridge I halfed the dough and began to roll out the dough and cut my shapes. I did this is two batches as not all the biscuits fitted onto the tray. I left them to cool down before decorating them.


For decorating them I just used some pastel pens as I’m not good when it comes to using a piping bag. I think they turned out pretty well. They make good dunking in ya tea biscuits and they are a little dry despite me following the recipe step by step. These are a quick and easy little treat to bake and I will definitely be looking to bake more biscuits.

  1. These are so cute! I wish I had thought to make Easter biscuits!! I have been making the usual banana bread, muffins and cookies – all of the basics. xx
