Hi Everyone, hope your all well.
My (like post of yours) Instagram has been inundated with people baking banana loafs, and I did think about doing one myself. I then decided that after flicking through my Mary Berry Fast Cakes book I came across a lovely little recipe for banana and chocolate chip muffins. I was excited, nothing better than adding in a little piece of heaven into a bake.
The Recipe.
2 ripe bananas
250g self-raising flour
1 level tsp baking powder
100g butter
175g light muscovado sugar
2 large eggs
1 x 150g pot of natural yoghurt
2 tbsp milk
Chocolate chips
I first started mashing up the bananas with a fork before adding all of the ingredients (minus the chocolate chips) into a bowl. Now I didn’t have any of the muscovado sugar so I just used normal granulated sugar that you use in your tea. Once all the ingredients were well blended together I stirred in to the chocolate chips. As the over was nearly heated up (180 degrees/Gas 4) I started spooning in my mixture into my cases. Popped them into the oven for 25-30 minutes or until they are lightly golden brown. Once baked I left them to cool down. They smelt amazing when they were cooking as I was super excited to eat one haha.
The recipe says it bakes 12 muffins however they turned out a little on the small side despite putting 3 heaps of mixture into the cases. I do feel that I should of just made 6 and that would of been plenty enough. However they tasted amazing if I do say so myself. Pleased I decided to bake these instead of a banana loaf. I really really enjoy baking at the moment it helps pass the time away and results in the house smelling lovely, as well as having some lovely little afternoon treats.

I love banana bread! These look delicious – I love adding chocolate chips to my banana bread to make it ever sweeter. I want to make some blueberry muffins next as I love blueberry muffins. xx

oooo funny you should say that I was going through my book earlier and came across blueberry muffins very tempted to make them. These tasted lovely. xx
