Happy Sunday and Happy Fathers day to my hero – my dad.
As it’s Father’s Day I asked my dad if he’d like me to bake him a little something and naturally he said yes. He asked for a lemon drizzle cake. Instead of a cake I decided to do a loaf instead. Now I’ll be honest I’ve never tried lemon drizzle before so I was excited to give it a try. Nor have a baked a loaf before. Today was a day of firsts haha.
175g caster sugar
175g self raising flour
175g softened butter
Finely grated zest of a Lemon
3/4 level tsp baking powder
100g icing sugar
juice of a lemon
Like always I added all the ingredients into a bowl and whisked together until well blended and smooth. Once mixed I poured into the loaf tin that was grease proofed and baked for 25-30 minutes or until springy and golden brown on top.
Once it had cooled I began my topping. I decided to drizzle my icing sugar over the top but you can decorate however you like.
I’m pretty happy with how it turned out for my first ever attempt at a loaf and drizzle cake. It tastes amazing why have I never tried this type of cake before. It was the perfect amount of lemon not too bitter but not too sweet. My dad was pleased with his cake choice and enjoyed a slice or two with a nice cup of tea.
