|Baking -Peppermint Cupcakes|

Happy Friday!!!!

You lovely lot seem to love reading my baking posts so I’m back with another one!. I simply love mint chocolate always have done ever since I can remember, and the one thing I love about Christmas time is the fact that we buy after eights. Whilst I’m not a fan of dark chocolate I’m a sucker for these. Yes incase you weren’t aware that after eights chocolate is actually made from dark chocolate, I only recently learnt that haha.

After looking through my good old trusty Mary Berry’s fast cakes book I spotted these peppermint creams and I surprisingly had all the ingredients in my cupboard which was a bonus in this awful weather.

The Recipe:

1 level tbsp coco powder

1 tbsp hot water

4oz butter

4oz self-raising flour

4oz caster sugar

1 level tbsp baking powder

2 eggs

For decoration

8oz icing sugar

roughly 2 tbsp cold water

2-3 drops peppermint extract

2-3 drops of green colouring

chocolate peppermints/after eights

I prepped out all my ingredients, pre heated my oven and put my cases into the tray. I mixed together the coco powder and hot water until it was a smooth texture. Next I added in all of the other cake ingredients and mixed until they were all combined. This recipe makes 12 cupcakes but I decided to make bigger ones and just made 6. I popped the mixture equally (well tried too haha) into the cases and put into the oven for 20 minutes. Once I was happy they were baked I left them to cool for around an hour before getting on with my decoration.

For the decoration I made my icing carefully as to not make it too watery but a nice thicker consistency. I didn’t have any green food colouring so I just left it white. I added it a few drops of the peppermint extract and stirred it in. Once I was happy with the icing I spooned it onto the cakes, and yes it went EVERYWHERE! literally. As the icing was beginning to set I broke up a few after eights and attempted to stand them up in the icing, which as you can see failed.

They were a hit. Nice and fluffy inside not too dry, they were the perfect little afternoon treat cake. I really enjoyed making these as I haven’t baked cupcakes in ages, it was a nice little change.
