Happy Thursday!
I feel baking is helping me get through the dark cold days, as nothing beats the smell of a fresh batch of cakes or scones fresh from the oven. I love finding recipes I’ve never done before and I at the moment love a good tray bake so here’s a simple white chocolate and strawberry for you all.
The Recipe:
8oz butter
8oz caster sugar
10oz self raising flour
1 level tsp baking powder
4 large eggs
4 tbsp milk
1 tsp vanilla extract
1/2 5g tube of freeze-dried strawberries
4oz white chocolate
For the topping
4oz butter
6oz icing sugar
2 tbsp milk
1/2 tsp vanilla extract
1/2 7g tube freeze-dried strawberries
I preheated my oven to 180 degrees and lined my tin ready. I then measured out all of my ingredients minus the strawberries and chocolate until they were all mixed together and the texture was light and fluffy. I melted my chocolate and added that in with the strawberries so all of the ingredients were combined together. I had trouble finding the freeze-dried strawberries so I used a pack of dried strawberries. I chopped them into small pieces and they worked quite well. I then poured out the mixture into the baking tin and baked for around 30-35 minutes. You will know when it’s done as the cake should come away a little from the tin around the sides. I also like to use a little tooth pick to see if the cakes cooked. If it comes out clear it’s baked but if it’s a little sticky then it’s not quite ready yet. I left to to cool down in the tin before turning it out and decorating.
The topping I changed and instead of using the dried strawberries on top as they well didn’t look appealing I decided to use some pink confetti like sprinkles, I measured out the ingredients needed for the icing into a bowl and whisked until it became a creamy like texture and it had became pale in colour.
I was quite impressed with how this came out as when I tasted the dried strawberries they weren’t quite what I was expecting and didn’t taste as nice BUT when baked they tasted a whole lot better!. I’ve also never made my own butter cream icing before I normally use shop bought but thought no I’ll challenge myself and do it myself. Whilst it tasted ok I do think it could of been a bit thicker and could of set more before I cut it into pieces. The recipe itself was simple as I love just putting all of the ingredients into the mixed at the same time and it like always went down a treat!. A nice blend of strawberry with a hint of delicious white chocolate.

100% agree with this. I’ve also done a red velvet bake that also would work for valentines too. Might put it up over the weekend?

I didn’t like the dried strawberries when I opened the packet BUT when baked they tasted soooo much better 🙂 x
