Happy Monday and the start of a new week!
I hope you all had a lovely weekend, up North we saw the sunshine for a little while and by gosh it was lovely!. Spring is on it’s way, but enough about Spring let’s talk CAKE. Red velvet cake is up there in my top 3 choices when it comes to cakes I just LOVE IT. I was flicking through my trusty Mary Berry book and came across a traybake version. I love a good tray bake for some reason at the moment I prefer baking them to cakes, even though they take more time and I’m not a very patient person haha.
300g Bournville chocolate (or any of your preferred)
7oz caster sugar
4 large eggs
1 tsp vanilla extract
5oz self rating flour
red food colouring gel
For the icing
2oz full fat cream cheese
5oz icing sugar
1/2 tsp vanilla extract
I preheated the oven to 180 degrees and lined by traybake tin so it was all ready to go. I started by melting the chocolate and butter in a heatproof bowl over a pan of simmering water until it was a smooth and runny constancy. I measured out all of the other ingredients into the mixer, added in the melted chocolate and mixed until well combined. Once combined I stirred in my red food gel.
Once the red gel was in and stirred well I poured out the mixture into the tin making sure it was level on the top. I then left it to bake for around 35-40 minutes. The middle should feel firm when you press your fingers onto it. Once it was done I left to it completely cool down before adding my icing.
For the icing I measured out all of the ingredients into a large bowl and mixed together until it became pale and creamy. I began to spread it over the bake until I was happy with it. I added in an extra decoration of grated chocolate on top which I think looks just a good as Mary’s haha. Before cutting it into pieces I popped it in the fridge for a little while and that helped to set my icing which was so much better when it came to cutting into the bake.
I am very pleased with how this tray bake turned out. I used cooking chocolate instead of bournville chocolate as I’m not a fan of dark chocolate. I also have never made cream cheese icing before so I’m pretty impressed with how it tasted. Overall I loved this traybake, it’s perfect for a midweek treat or a weekend treat OR better yet an any day of the week treat!
