|Baking – Cheese Muffins|

Hope you’re all well

We all know I’m a huge cheese lover and a huge lover of cheese scones. I recently decided to try baking these cheese muffins I saw in my be-ro recipe book. I love trying out new bakes even though yes I know you’re thinking ‘Aren’t they just mini cheese scones?’ well yes in a round about way, BUT the difference between the two is that these use fresh chives instead of pepper, and instead of a dough like mixture you pour into paper cases like a cupcake.

The Recipe:

5oz self raising flour

A pinch of salt

1/2 tsp mustard powder

4oz grated cheddar cheese

1 egg

125ml milk

1 tbsp snipped fresh chives or chives in a jar

To start I preheated my oven to 200 degrees and lined my tin with paper cases ready. Next I sifted in my flour, salt and mustard powder into a large bowl and stirred in my grated cheese. In a jug I lightly beated my egg and made it up to 125ml and added in my chives. Once mixed I poured it into the flour mixture until they were all mixed together. I then poured it into the paper cases and baked for roughly 15 minutes of until golden brown. Once they were done I left they to properly cook down before trying them.

They looked and tasted delicious however I do prefer a cheese scone. Sometimes quick and easy bakes are needed for that little afternoon pick me up and these were perfect for that. I really liked the chives in them as well. Small and delightful.
